Dark Chocolate Rum Balls

I made this for a fun Christmas Potluck / Gift Exchange.

****This recipe contains real alcohol*****
First you’re going to want to start off with a store bought box of brownie mix and follow the directions on the box.

After the brownies are baked, let them cool off all the way. When they are cool,crumble them up with a fork

Add some rum of your choice and add as much as you want. (not too much, you don’t want to make a soup.)

Use your hands to make the mixture into tiny balls. You can also use a Tbl spoon for measurement.

When the mixture is completely ball-i-fied, place them into the freezer so they will be easier to work with.

Temper (melt) some chocolate coating. Take the balls out of the freezer and one by one coat the balls in chocolate.

Place back on the plate. When you are finished coating all the balls, place the plate back in the freezer so the balls harden.

When the balls are done, you can decorate them with some chopped up chocolate or drizzle them with left over melted chocolate.

(Don’t forget to cut off the chocolate “feet” that may be attached at the bottom of the balls.)

Braided Nutella Bread

I came across this tasty bread recipe on Goods Home Design and decided to try it out for our Thanksgiving Day dinner.

First you’re going to need to dissolve 1/2t  of yeast in 1/4 cup of warm water. Let it sit for 10 minutes.

In a separate bowl, combine 2 and 1/2 cups of all purpose flour, 1t salt, and 1T sugar. Add 3/4 cups of water to the mixture (1/4 cup at a time). Carefully fold ingredients together, after 10 minutes add the yeast mixture.

Lightly dust a clean counter top with flour and begin kneading dough until it is elastic but not sticky. Place in a bowl, coat with olive oil, and cover with a towel or clear wrap.

Let it sit in a warm place for 1 hour. The dough should double in size.

Take out dough and cut into equal halves.

Set one aside. Roll the other half out into a circular shape.

and place it on a baking sheet. Pour an even layer of Nutella on the surface, spread it evenly leaving half an inch of dough all the way around the edges.

Roll the other half of dough into a circle and place on top. Cut the layers like a pie, leaving the middle intact.

The next step is to twist each section 3 times. Twist the ends so they over lap each other as seen in the picture below…

Brush the soon to be bread with egg wash and place in the oven for 20 minutes at 350 degrees. Remove bread and brush again with egg wash. Place back in oven for 5 minutes at 425 degrees for that golden finish. Yum!

Things I would have done differently:
– Use more Nutella (always use more Nutella)
– Roll circles thinner/larger (I didn’t have a big enough pan)
– Made more/smaller cuts to create more ‘braids’

Hawaiian Black Bean and Corn Burger

Start off by soaking roughly 1 cup of black beans over night. Drain and rinse before boiling. Boil black beans on medium-high heat for 20 minutes or until soft by touch. Drain and cool black Beans. Add desired amount of corn, but no more than 1 cup.

Blend beans and corn in a blender until desired consistency is reached.

Chop 1 clove of garlic and 1/2 cup of yellow union. Saute’ in olive oil until translucent but not brown.

Add all ingredients, including 1/2 cup of bread crumbs (add more if needed), 1 egg and desired seasonings (I used ground red pepper, black pepper and basil) in a large bowl and mix together.

Form into round patties and place into a well oiled pan to sear each side.
